Ginger Berry Almond Oats

Picture this: you wake up on your day off, you’re craving something quick and tasty, but the last thing you want to do is take the time to put together an elaborate breakfast.  You don’t want to skip breakfast and you want something more interesting than a bowl of cereal or an egg.  I’ve got the perfect solution: loaded oatmeal!

Before you turn your nose up at the idea of eating oatmeal, hear me out.  Oats are grains, like brown rice, barely, millet, buckwheat, etc. and are incredibly versatile.  They are also an excellent source of iron, fiber, and protein. Loaded oatmeal is a sweet and satisfying way to start your day, that takes minimal time and effort!

I’ve been a big fan of oatmeal since I was a kid (I did make the switch from the instant packets to rolled oats).  This “sweet” loaded oatmeal contains a mixture of unique flavors that are guaranteed to start your day off with a satisfying smile.

This isn’t your typical bowl of oatmeal, right?

PRO TIP: don’t be afraid to add new fruits, nuts or seeds to change up the texture and flavor.


Ingredients

Time: < 10 minutes

Yield1 serving

  • 3/4 cup oats
  • 1 cup water
  • 1 TBSP raw almond butter (nut butter of choice)

Toppings

  • 1/4 cup frozen blueberries
  • 1 TBSP frozen raspberry bits
  • 2 TBSP sliced raw unsalted almonds (or nut of choice)
  • Handful of dried ginger chunks
  • 1 tsp chia seeds
  • Dash of cinnamon

Directions

  1. Combine oats and water in a medium-size sauce pan over medium heat, bring to a boil.
  2. Reduce heat and cook for 3 – 5 minutes, stirring occasionally.
  3. Remove from heat and allow to stand for 1 minute, until all liquid is evaporated.
  4. Add almond butter (nut butter of your choice) and stir.
  5. Place in a bowl, add toppings, and enjoy!
